1. Pre-heat oven to 190°C.
2. Put tomatoes, the fresh herbs, oregano, garlic and sausages in a roasting tray.
3. Drizzle well with extra virgin olive oil and balsamic vinegar and season with salt and pepper. Toss together, make sure the sausages are on top and pop the tray into the oven for 30 minutes.
4. 30 minutes later, shake the pan and turn the sausages around. Return to oven for another 15 to 30 minutes, depending on how golden and sticky you like your sausages.
Serve with mashed potato, rice, green salad or a glass of wine.
