1. In a paella pan, sear toulouse, chorizo, prawns, mussel. Once cooked, remove from pan and set aside.
2. Slice toulouse to bite size.
3. In paella pan, sauté garlic, onion and bomba rice for 5 minutes.
4. Add in saffron, sweet paprika, chopped tomato, broth and bring to a boil for 3 minutes. Season with salt and black pepper to taste.
5. Arrange mussels, prawns, toulouse and chorizo on top and place in preheated oven at 180°C for 10 to 15 minutes or till rice is cooked.
6. Remove from oven, garnish with lemon wedges and parsley and serve.
