Salad of Smoked Duck Breast

 
 
Ingredients for 4 servings as a starter:
 
1 pcs              Smoked Huber’s Duck breast     
6 tbsp             Good Extra Virgin Olive Oil
1 ½ tbsp         Red Wine Vinegar
1 tbsp             Margaret River Blueberry Vinegar
1 no                Clove of Garlic
1 no                French Shallot
                        Salt, Black Pepper, Sugar
   1 pkt              Assorted Garden Greens or lettuce of your choice                
 
   A few fresh leaves of:
                        Chervil, Italian Parsley, Tarragon
  
 
 
Pre – preparation
 
- Wash & Dry the salad thoroughly
- Chop the clove of garlic
- Dice the onions
- Pluck the fresh herbs
- Prepare the Vinegraitte by mixing the oil, vinegars,   garlic, onion, salt, freshly  
  ground black pepper and the sugar with a whisk in a bowl large enough to hold all the greens
- Season to taste
 
Preparation
- Slice the duck breast into thin slices
- Toss the leaves of green & herbs in the bowl holding the vinaigrette
 
Arrangement
- Put the salad on a plate and arrange the slices of duck around it.
 
Note
- One can add also halved walnuts, grapes or caramelized Belgium endive or even
slices of sautéed potatoes
 
With the additional ingredients it can then be easily served as a light main course for
lunch

- La Vieille Ferme Rose, Cotes Du Ventoux
