Where there was once over 300 producers of this French delicacy, there are only three left these days!
Made from pasteurized cow’s milk, with an edible soft washed rind, it is superbly creamy with a very intense aroma but a nutty sweet, tangy and subtle flavour. The cheese tastes phenomenally better than it smells!
It obtained the Appelation of Origine Controlée Epoisses of Burgundy in 1991. The fabrication of this cheese is very specific and complex as the cheese receives manual and individual care throughout the process.
It can be enjoyed on its own with a glass of Chablis or put it over very low heat with some heavy cream, chicken stock and a good dash of pepper and serve it over everything!
