Muhlistein (millstone) cheese is one of the
many creations by the famous artisanal cheese maker, Will Schmid, from the
Kanton of St. Gallen.
This cheese has a thin layer of grey mould
on its rind and a hole in the center gives it the appearance of a
millstone. Do not be fooled by its dull
mouldy exterior, cut it up and you’ll see a beautiful yellow color.
Made from Swiss cow’s milk, it is creamy,
velvety and has a slightly sour note to it. The muhlistein is semi-hard and
very flavorful.
