Italtouch Truffles - 1st Aug 2020



With over 25 years of experience, CEO Massimo Vidoni, AKA the Truffle man opened Italtouch in the U.A.E in 2012. Italtouch specialises in sourcing the best truffles, truffle products and specialty products available in Europe today. His precious finds have served the best restaurants, hotels in the U.A.E. and supplying the top chefs from around the world. For his distinctive mark of quality, Massimo gained notoriety on CNN by importing the largest Truffle into the US.

Truffles are not farmed but hunted, it is very hard to find them as they grow underground to about 20-30cm deep.  Well-trained truffle dogs are deployed to help find and dig them out.  The truffle season last only for 3 months between late October and late December, and they usually grow on hills near the roots of trees, covered with wild bushes.

Truffles are tubers, of the funghi family, they grow wild, their microspores live in symbiosis with the roots of trees, and the rain activates them.  There are about 2600 species but only 3 are widely recognized by the culinary world: the white truffles (tuber magnatum pico), black winter truffles (tuber melanosporum) or black diamond and lastly, the summer truffles (tuber aestivum).

Chef’s Reserve Whole Truffles, 50g and 200g

 

Only the best whole truffles are hand-picked by our experts to be selected for jars. They are a great substitute for when fresh black truffle is out of season. Shave them on pastas, risottos and meats, they are also often used for garnishing.
Ingredients: Black truffle, water, salt.

 

La Tartufata Truffle Sauce, 80g and 500g

 

This wonderful sauce is perfect to add truffle flavour to any dish. It comes from an Artisanal recipe, made from mixing summer truffles 4%, mushrooms, black olives and anchovy. 
It’s used in many dishes, from jazzing up a simple pasta or risotto to garnishing meat and canapés. Also used on soft cheese, eggs or can be simply spread it on toasted breads. 
Ingredients: Champignon, extra virgin olive oil, black olives, summer black truffle 4%, salt, capers, anchovy, flavouring, pepper. 
(Allergen: anchovy.)

 



La Tartufina Truffle Sauce, 80g and 500g

 

This smooth sauce is made from a traditional recipe in which two main ingredients Champignon mushroom and black summer truffle are blended into a rich sauce with strong truffle flavour. Ideal for pasta, risotto, canapés or sandwiches. Diluted with milk, cream, butter or pan juices turns into delicious sauce for meat or fish.
Ingredients: Champignon, extra virgin olive oil, summer black truffle 1.3%, salt, flavouring, garlic, pepper.

 

White Truffle Sauce, 250g

 

Ideal with pasta, risotto and canapes.
Ingredients: Champignon (Agaricus Bisporus) 73.2%, sunflower oil, white truffle (Tuber Magnatum Pico) 0.8%, salt flavouring, garlic.


Chef’s Taste White Truffle Oil, 250ml

 

A delicate blend of high quality Italian olive oil and White truffle aroma is used to create this rich, aromatic truffle oil. It adds an excellent, refined flavour to all your dishes. Wonderful when used just before serving risottos, tagliatelle, eggs, potatoes, carpaccio, pizzas and meats. Highly recommended for its quality by top chefs and food lovers of the Gulf.
Ingredients: Italian olive oil infused with White alba truffle flavour.

 

Chef’s Taste Black Truffle Oil, 250ml

 

This oil is made with first-pressed Italian olive oil and French Black truffle essence for an intense aroma. Its complex flavour will inspire greatness in the kitchen.
Just remember that when it comes to truffle oil, a little bit goes a long way. Many chefs use truffle oil in dishes studded with real truffles in order to infuse the flavour throughout the dish.

Our bestseller, the simplicity of Carpaccio is what makes it outstanding. Fresh mature Summer Italian truffles are thinly sliced and stored in extra virgin truffle oil from Lake Garda. Use it as a condiment for meats, fish, pastas, risottos, over scramble eggs, mash potatoes or on a focaccia. You truly will gain some chef’s stars in the eyes of your guests.

Ingredients: 75% Summer black truffle, extra virgin olive oil, salt, flavouring.

 

Ten Year Old Balsamic Vinegar, 250g

This Balsamic Vinegar of Modena is produced for Italtouch. It's aged for more than 10 years in Italy and has a sweet aromatic and a smooth flavor. When it comes to good quality balsamic vinegar at a affordable pice, it's the perfect option. 
A vinegar you can use every day to lift salads, marinades and sauces. It's delicious.
