I’m thrilled to introduce a new initiative that combines my passion for quality ingredients with your culinary creativity: our customisable cheese and cold cuts platters! After years of sourcing the finest artisanal cheeses and carefully curated cold cuts, I can’t wait for you to experience the delicious combinations we’re offering. Imagine a beautifully arranged platter, filled with our hand-picked selection that not only reflects our commitment to quality but also allows you to tailor it to your unique taste. Best of all, as we manufacture some of the cold cuts in-house and import the other ingredients directly, we are able to offer the platters at an amazing value. Whether you’re planning an intimate gathering, a festive celebration, as a gift or simply treating yourself, these platters are designed to impress and satisfy. Let’s embark on this delicious journey together!

As you explore the wide assortment, I’d love to share some tips to help you craft the perfect pairing:

  • Complement Flavours: One of my favourite combinations is pairing creamy cheeses like Brie or Camembert with salty cold cuts such as prosciutto or salami. The richness of the cheese balances the saltiness of the meat beautifully, creating a satisfying experience.
  • Contrast Textures: I often enjoy combining soft cheeses with firmer cold cuts. For instance, the smoothness of Appenzeller pairs perfectly with the chewiness of air-dried beef, resulting in a delightful contrast that elevates each bite.
  • Intensity: For those who crave intensity, strong-flavoured cheeses like aged cheddar or blue cheese pairs wonderfully with Bresaola. The mold in blue cheese injects a spicy, almost peppery flavour that stands up to the rich umami and sweetness of the Bresaola.
  • Mix and Match for Balance: Don’t hesitate to get creative! I suggest combining a creamy cow's cheese with a stronger sheep's cheese and complementing them with a variety of cold cuts from our range. This creates a diverse flavour profile that will excite your palate.

Our store offers a big range of cheeses and cold cuts, making it difficult to list them all. Should you have any cheeses and/or cold cuts that you feel should be included, kindly let us know and we will see if it is feasible to add them.


To take your exploration up another notch, besides the common choice of wine, consider pairing your platter with our award-winning Kinmon Akita aged sake whose umami is the key pillar. When paired with foods that are also high in umami such as cheeses and robust cold cuts, you can get that incredibly powerful and irresistible ‘double umami effect’! For instance, pairing creamy and nutty cheese like Brie de Meaux Truffle or Comté with the caramel and nutty tones of aged sake creates a luxurious mouthfeel. I also enjoy savoury cold cuts like Bresaola or Jamon Serrano alongside aged sake, which balances their saltiness while enhancing the overall depth of flavour.

Congratulations to Stockyard for Their Champion Win!

We are incredibly proud to share that our partner, Stockyard, has achieved outstanding success at the Sydney Royal Branded Beef competition, winning the champion title for their Kiwami top-shelf Wagyu brand!
In addition to this prestigious award, they have also secured a silver medal for their Stockyard Black Wagyu, achieving a marble score of 8-9, and a bronze medal for their Stockyard Gold, a 200-day long-fed product, in the Grain-Fed Class.
Stockyard has been participating in the Sydney Royal Branded Beef competition since 2005 and has proudly been awarded 41 medals to date. Last year, they were also named a finalist for the prestigious President’s Medal, which assesses excellence not just in product quality but also across environmental, social, and governance attributes.

Kinmon Akita Aged Sake

 

The Kinmon Akita Brewery was formed 85 years ago and has since amassed eight Gold Medals at the IWC and Gold and Platinum Medals at Kura Master for its distinctive sakes. The brewery's success lies in mastering the essence of Japanese sake, emphasising umami as a key pillar in defying preconceived notions of what sake can be. Highlighting the X3 range, which uses three times the amount of koji rice, they have created a rich and indulgent sake with deep umami flavours of rice. The harmonious balance of juicy acidity from the koji and the overwhelming sweetness of the rice is truly remarkable.
Due to the positive response we have received, we have just added the new X3 Black to our exquisite range. Try pairing it with creamy cheeses, oysters, and Wagyu beef, which are perfect complements to bring the umami experience to greater heights!

Llopart Original 1887
Single Estate Les FlandesBrut Nature · Aged more than 108 months

 

Llopart Original 1887 is crafted from grapes of the oldest mountain vine in Les Flandes, honouring traditional 19th-century winemaking methods. The blend is 50% Montònega, 25% Xarel·lo, and 25% Macabeu from vineyards at 380 metres above sea level.

This sparkling wine offers notes of ripe white fruit, honey, brioche, toast, butter, and nuts. It has a powerful flavour, balanced acidity, and a long, voluminous finish. Perfect as an aperitif, it pairs wonderfully with cheeses like Gruyere, Idiazabal, Jarlsberg, and Manchego.

QUESOS DE HUALDO Manchego Cheese

 

Made from the milk of the Manchega sheep fostered on the pastures in the heartland of Spain, this semi hard cheese is identified by its distinctive herringbone rind and sweet savour.Quesos De Hualdo makes its Manchego cheese in a traditional way as marked by the specifications of the P.D.O. Queso Manchego. It is formed in a mold that leaves the drawing of the belt printed on the rind of each piece. Throughout its maturation, it is turned and brushed to obtain optimum organoleptic qualities.

 

The resulting cheese has a cylindrical shape and flat faces, a beautiful ivory coloured paste and has small, well distributed eyes. Its smell is lactic, with hints of cereal and fungal notes, and a firm and buttery texture. Pair it with our recommended wine,Llopart Original 1887 for an exquisite combination that will leave your tastebuds in bliss.

 

Wine and cheese are available at level 1 and 2 respectively.
