Stir-fry Spicy Lamb Chops

Ingredients

14 lamb chops
30g salted fish, chopped
30g eggplant
50g red chilli, sliced
20g dark soya sauce
20g dried shrimps
30g celery, cut cubes
30g snow pea
30ml chicken stock, defrosted
20ml cooking oil
30g onion
30g garlic, cut half
10g chilli paste
5g sugar
Sea salt and freshly grounded black peppercorn

Cooking Method

1. Season lamb chops with salt and pepper, pan fry till medium and set aside.
2. Heat oil in pot, sauté salted fish and dried shrimps till fragrant. Then, add in garlic, onion, chilli paste,sugar and dark soya sauce. 
3. Then add chicken stock and bring to boil. Toss in the lamb chops all together and then season with salt and pepper. 
4. Heat oil in another pan at medium heat, stir-fry eggplants, snow peas, celery and red chili. Use them as garnishes.
