Grilled Pork Brochettes

Ingredients

400g pork fillets, medallion
10 dashers Huber’s streaky bacon
100g pineapple cubes
1 bell pepper, cut cubes
1 red onion, cut cubes
1 bottle Roza’s  Chilli and Ginger sauce
I tbsp lemon juice
Sea salt and freshly ground black peppercorns

Cooking Method


1. Wrap bacon around pork medallions.
 
2. Push through pineapples, peppers, onions and 2 pork medallions on each skewer.

3. Brush pork medallions with Ginger and Chilli sauce and lemon juice.

4. Grill brochettes for 3 to 4 minutes on each side till cooked.
