Smoked Duck Salad with Pineapple Salsa

Ingredients

1 Smoked duck breast 
100g Honey pineapple, diced
50g Roma tomatoes, diced
10g Basil leaves, sliced
10g Shallots, chopped 
5g Garlic, chopped 
20ml Extra virgin olive oil
10ml Balsamic vinegar 
Sea salt and pepper (To taste)

Cooking Method

1.   Slice duck breast to 3mm thickness and set aside.

2.   Toss salsa ingredients together.

3.   Season with sea salt and pepper to taste.

4.   Serve the sliced duck breast with salsa.
