Baked Mooncake with Orange-Laced Red Bean Paste


1.5 litre Water
1 litre Orange juice
360g All purpose flour 
250g Golden syrup 
250g Dried red beans
160g Sugar
80g Peanut oil
8g Alkaline water
15g Dried orange peel
1 Egg
Orange-laced red bean paste
Mooncake skin

Cooking Method

1. Soak red beans and orange peel in water overnight. 
2. Add orange juice and bring it to a boil. 

3. Simmer for 1 hour or till beans soften and you see the bottom of your pot for 2 seconds. 

4. Blend in a food processor and let it cool. 

5. Mix golden syrup, peanut oil and alkaline water together. 

6. Add in flour and knead into a dough. Allow it to rest for an hour.  

7. Wrap 110g of filling with 45g of dough and press in mooncake mold. 

8. Brush eggwash on, and bake them in oven at 180°C for 10 minutes. 

9. Leave them to rest overnight.
