Marsala Lamb Minced Quesdilla

Ingredients

For 2 servings
 

200g lamb minced
1 tbsp green capsicum, julienned
1 tbsp red capsicum, julienned
1 red onion, chopped
1 tomato, chopped 
1 tsp cumin (whole)
1 tsp red chilli powder
1/2 tsp coriander powder
1 pc Mozzarella cheese block, diced
2 pieces tortilla wrap
Oil
Sea salt 
Fresh coriander for garnishing

 

Cooking Method

  1. Heat some oil on a frying pan. Add cumin seeds and let it crack. 
     
  2. Add red onions, sauteed until translucent. Then add tomatoes and cook for about 5 minutes. 
     
  3. Add chilli powder and coriander powder. If necessary, add some water. Add lamb, and both capsicums. Cook well on low heat. Season with salt and fry till dry. Remove and set aside. 
     
  4. On the same pan with the heat still on low, place one piece of the tortilla wrap. Layer the lamb on the wrap, staying away from the edges. Add some diced Mozzarella cheese. Cover with another piece of the wrap.
     
  5. Add some oil or butter to the pan and allow the quesdilla to brown. Then turn it around with a broad spatula and brown the other side.
     
  6. Serve hot
