1. Pat the steak dry with paper towel and then rub with olive oil
2. Season generously with chopped rosemary, sea salt, and coarsely crushed black peppercorns.
3. Heat the grill pan on high heat.
4. Place the steak in and let it sear for about 2 minutes. Then turn it 90° to cross mark the steaks and let it brown for another 2 minutes.
5. Turn over and do the same for the other side.
6. Then rest the meat on a meat pan for about 5 minutes and allow the meat juice to drain off.
7. Place the steak on a plate and smother on the Café de Paris butter!
