As we celebrate Mother's Day this month, I want to take a moment to appreciate all the incredible mothers out there. As a father of three, I have seen firsthand the dedication and hard work that goes into being a mother. My wife is a true superhero, juggling her responsibilities as a mother and wife with grace and strength.

After a 2 years hiatus, we're back with our popular Mangalica pork!


Dating back to the 19th century, the Mangalica is a heritage pork that has earned the title of 'Kobe beef of pork'. Considered among the tastiest pork in the world, the meat of the Mangalica pig is reddish, highly marbled with creamy white fat, and is high in omega-3 fatty acids and natural antioxidants. Our supplier, the National Association of Mangalica Breeders, raise the pigs to a stunning optimal weight of 140-150kg to provide the best eating experience, a good balance of fat and lean meat. The fat has a lower meting point and is much lighter and less greasy than normal pork fat.


With unbeatable flavour and jaw dropping marbling, this limited pork is definitely not to be missed! You can find it in the freezer section on level 1 beside the bones and offals.



What better way to show your love and appreciation for the special women in your life than by cooking a delicious meal? Impress your mom with your cooking skills by trying out this mouthwatering honey garlic pork chop recipe! Whether you're an experienced chef or a beginner, this dish is easy to prepare and guaranteed to be a crowd-pleaser.



  • 2 x 300g Mangalica or Canadian pork chops
  • 200g of white asparagus
  • 3 tbsp of unsalted butter
  • 4 large cloves of garlic, (2 lightly crushed with skins on, 2 minced)
  • 80g of Wellington Apiary honey
  • 1.5 tbsp of apple cider vinegar
  • 1 tbsp of light soy sauce
  • 1 sprig of rosemary
  • 1 sprig of thyme
  • Salt & Black Pepper, to taste
  • Olive Oil, as needed


  1. Remove pork chops from the fridge and allow it to come down to room temperature.
  2. Pat the pork dry with paper towels and sprinkle both sides with salt and pepper. Rub salt & pepper into the meat.
  3. Place a pan over high heat. Once smoking hot, drizzle in a dash of oil and add in the pork. Leave to fry for 3-5 minutes, or until golden. Flip and continue frying for another 2 minutes until golden.
  4. Add 2 tablespoons of butter, thyme, rosemary and 2 cloves cloves of garlic into the pan. Baste the pork for 1-2 minutes.
  5. Place the garlic & herbs on one of the pork, then place the other pork on top so the strips of fat align. Sear the meat, fat side down, to render down the fat for 1-2 minutes or until golden.
  6. Remove pork from the pan & rest to one side. It is important to let the pork rest so it retains its juices.
  7. Turn the heat down to a low-medium and remove any large bits of char. When the pan has cooled down, add in the minced garlic. Fry until it just begins to turn golden before adding in the honey, soy sauce and apple cider vinegar.
  8. Stir and simmer until the sauce thickens. Add the pork back into the pan and baste it in the sauce for 30 seconds.
  9. Skin white asparagus and boil it in salted water. Let it boil until it reaches the desired texture. Add some butter.
  10. Serve pork chops with white asparagus and enjoy!

Have a taste of this fantastic wine that is not to be missed!


This remarkable white wine saw its first light in 2021 and only a maximum of 8,000 bottles have been made. This is a new premium white wine, made from an ancient Malvasia vineyard.


In the nose, hints of almonds and nuts, white flowers, peach peels and predominant notes of ripe yellow apples. On the palate, the white Tridente is flavoursome and balanced, with a floral touch on a long, mildly spicy finish that leaves notes of apple and pear nectar.


Pairing perfectly with starters, rice dishes, fish, shellfish, various salads and pastas, get this stunning wine at our level 1 of our butchery today!
