CELEBRATING OKTOBERFEST WITH HUBER'S

A year ago, I was fortunate enough to be introduced to this special way of rearing Japanese wagyu in Hokkaido. Top quality Hokkaido milk producing Holstein cows were crossbred with Japanese Wagyu bulls. The resulting hybrid cattle, branded as N34 Garnet beef, are raised with the same care, attention and feeding of Japanese wagyu, resulting in meat quality that is out of this world. Pure Japanese wagyu is highly marbled, nice in small amounts and suited for Shabu/Sukiyaki, but as a steak, it is typically too rich. N34 on the other hand, isn’t as rich and it combines the sweetness of the fat with the beefiness of red meat, while still retaining great tenderness and juiciness, producing what I would call one of, or if not the best steak I ever had. It’s still going to be on the fattier side and a nice indulgence but at least I can eat it as a steak. I hope you give it a try and let me know what you think?

As the month of September rolls in, we are getting ready to celebrate the largest folk festival in the world, Oktoberfest! A time for great food, boisterous songs, and hearty drinking, we are elated to bring some of that festive cheer to you.

In the spirit of the festivities, bite into our wide variety of Huber’s Homemade Sausages, perfect for the season of Oktoberfest! Sausages are an essential part of any Oktoberfest party whether boiled, grilled, pan-fried, or deep fried, and pair well with refreshing German beer, which we also carry a wide variety of. Visit our butchery and stock up your pantries for the upcoming feast, and make sure to grab some spices and sides for your sausages too

If the celebration has got you eager to try out some authentic German cuisine, visit our bistro which will host a specially curated limited time Oktoberfest menu treating you to a gastronomic experience unlike any other!

And if you would like to bring some of these experiences into your home, be sure to sign up for our September cooking classes where we will be teaching you how to prepare some of these hearty recipes for your friends and family.

I’ve always believed that nothing brings people together like good food and drink, and Oktoberfest truly embodies this spirit. Let’s come together to honour this tradition, creating new memories and looking back fondly on old ones.

Excite Your Appetite!

We have sensational news to share!

The long-awaited N34 Garnet Japanese Wagyu beef from Nobels, exclusively sourced for our esteemed F&B partners, is now retailing at Huber’s Butchery starting this September.

You may be wondering what makes this Wagyu beef so special. Here’s why:

Origin and Breed: This exceptional beef comes from a hybrid of Japan’s renowned Japanese Black cattle and Holstein dairy cattle. Only female cows are selected, combining the Japanese Black's superior meat quality with the Holstein's larger yield. The result is a tender, well-sized beef with just the right firmness.

Breeding Ground: Raised on a Nobels-owned ranch near Japan’s largest Daisetsuzan National Park, the cattle benefit from a pristine, stress-free environment. They graze on lush pastures and drink fresh, pure water, which enhances their overall well-being and the quality of the meat.

Grading: N34 is the premium grade reserved for the finest Garnet Beef. Cattle are nurtured for 34 to 40 months, producing beef with a rich garnet red colour, reminiscent of fine aged red wine. To achieve the N34 standard, the beef must meet eight strict quality criteria, ensuring a truly unmatched experience for discerning meat lovers.

Feeding: The cattle is grain fed for over 2 years with a proprietary mix of high energy grains and 17 herbs, namely Anise, Cinnamon, Celery, Clove, Ginger, Mint, Time, Oregano, Lavender, Garlic, Red pepper, Rosemary, Laurel, giving the beef its characteristic rich beef flavour and sweetness. Unlike pure bred Japanese Wagyu which is very rich with little flavour, N34 produces the perfect steak with the perfect balance of tenderness, fat and flavour.

Now available exclusively at Huber’s Butchery, this is your chance to experience the incredible flavour and quality of N34 Garnet Wagyu. We recommend pairing it with our aged sakes from the award-winning Akita Fuji Brewery, including Yamabuki Gold, Yamabuki Oak Cask Finish, and the newly arrived X3 Black. The harmonious fusion of rich, tender beef and refined sake creates a truly unforgettable experience that will excite your senses!

Cartizze Brut Valdobbiadene Superiore di Cartizze Docg Brut

The Cartizze is the only official sub-zone of Conegliano Valdobbiadene Prosecco DOCG and is considered to be the finest version of spumante. The vineyards in the Valdobbiadene area, specifically on the Cartizze hill, have steep slopes, often with inclines of 30 degrees . This makes mechanized harvesting impractical, so all vineyard work, including the harvest, is done manually to ensure the highest quality of the grapes.

The wine has a straw-yellow hue is enhanced by fruity and floral aromas, brought to life by a persistent perlage. On the palate, the wine strikes a perfect balance between zesty and mineral notes, leading to a long, satisfying finish.

It's an excellent choice as an aperitif, pairing wonderfully with couscous, crunchy vegetable, as well as pairing exceptionally withsoft cheeses like buffalo mozzarella. burrata, brie and Camembert.

Our recommended cheese pairing: Del Gaudio Gourmet Camembert di Bufala al Tartufo

This cheese is made from premium buffalo milk sourced from Lombardy, this Italian version boasts a distinctive, robust flavour with an unmistakable aroma. Encased in a smooth, flowery rind, the rich, creamy buffalo paste combined with the delicate layer of Italian summer truffles creates a perfectly balanced flavour.

When paired with Cartizze Brut, the crisp, fruity notes of the sparkling wine cut through the richness of the cheese, refreshing the palate and enhancing the delicate truffle flavours.

Wine and cheese are available at level 1 and 2 respectively.
