Earlier this week, we and the producer hosted a tasting event for chefs and industry partners, who described the reindeer meat as tender and lean, with a unique taste that is rich yet not overly gamey. All agreed that it will definitely be an intriguing highlight in their festive menus. With such a positive feedback, we have specially reserved a limited amount exclusively for our Butchery, ensuring that you and your guests can experience this rare delicacy firsthand.

 

Another new and interesting addition to consider for your Christmas list is our Juan Pedro Domercq Abanico set featuring five hand-selected cuts from 100% Ibérico bellota-fed pork. Excite Your Appetite!

We are honoured to collaborate with Lapin Liha to bring certified reindeer meat directly from Lapland, Finland, to Singapore. At our exclusive tasting event, we were joined by Irma Ylikangas, Counsellor of Innovation and Trade Affairs at the Embassy of Finland, and Juha Markkanen, Finland’s Ambassador to Singapore. Everyone at the tasting event enjoyed the reindeer meat. Most commented that it has a distinct, mildly gamey flavour that is both rich and earthy, with a subtle sweetness. Somewhat similar to venison but less intense, reindeer meat captures the purity of the Arctic landscape, thanks to their natural diet of lichen and other native vegetation.

 

To complement this unique flavour, reindeer meat pairs beautifully with red wine jus, which adds depth and complexity without overpowering its natural flavour. The acidity and richness of red wine enhance the lean, slightly sweet qualities of reindeer meat, while the jus’ savoury base adds a silky texture to each bite. Here’s a simple recipe:

Sauté Shallots & Garlic: Start by sautéing finely chopped shallots and garlic in a bit of butter until soft and fragrant.

Deglaze with Red Wine: Pour in a good-quality red wine (a cabernet or shiraz works well) and let it reduce by about half to concentrate the flavours.

Add Broth: Add beef or veal stock to build a robust, savoury base, then reduce again to thicken.

Season and Finish: Add fresh thyme, rosemary, and a bay leaf, then simmer until the jus is rich and aromatic. Strain out the herbs and finish with a pat of butter for a glossy texture.

Drizzle the red wine jus over the reindeer meat to bring out its flavour and add a touch of elegance to the dish.
