This month, we’re featuring Margra Lamb, the perfect choice for your Easter celebrations. Renowned for its exceptional tenderness and rich flavour, Margra Lamb is a premium product that promises to be the centrepiece of your festive meals.

 

At Huber's, we are committed to offering products like Margra lambs, which are sustainably raised and ethically bred. It involves years of careful breeding and research with over 20,000 embryo transfers, resulting in Margra being the first to create a special breed of fully-haired meat sheep intended for Australian conditions. Unlike traditional wool sheep, these sheep naturally shed their coats, eliminating the need for shearing and mulesing, reducing stress on the animal and minimising water consumption. Their haired coat prevents lanolin production, thus removing the gamey aroma often associated with lamb.

 

The result? A delicate, mild and clean flavour profile. All Margra lambs are raised free-range and naturally fed on abundant pasturelands with ample access to clean drinking water and shade. The farmer emphasises on ethical and sustainable practices, removing all use of hormones and antibiotics. Flavour-Packed Lamb Kleftiko

Looking for the perfect Easter dish? Lamb Kleftiko is a Mediterranean favourite, slow-cooked to tender, juicy perfection. Made with Margra lamb, renowned for its melt-in-your-mouth texture, paired with fresh vegetables and a fragrant marinade of garlic, rosemary, and honey, this dish is a guaranteed crowd-pleaser.

 

The best part? It’s easy to prepare yet bursting with flavour. The Margra lamb, combined with earthy vegetables and crumbled feta, creates a wholesome, satisfying meal that’s perfect for bringing everyone together.

 

We’ve shared the full recipe for you to try at home – we’re sure it will become a family favourite. Watch the video to see how to make this delicious Lamb Kleftiko! The full recipe is included below.

Ingredients:

- 1.5-2kg boneless leg of lamb (or bone-in lamb leg, lamb shanks, or boneless shoulder chunks)

- 70ml stock (beef, chicken, or vegetable) 

- 4 bay leaves 

- 600-800g Kipfler potatoes (or other waxy varieties) 

- 2 tomatoes 

- 2 onions 

- 2 carrots 

- 2 capsicums 

- Crumbled feta cheese 

 

Marinade:

- 6-8 garlic cloves 

- 2-3 sprigs rosemary 

- Handful of oregano (or 3 tsp dried) 

- 1/2 tsp ground cinnamon 

- 1 tbsp honey 

- 1/4 cup EVOO 

- Juice of 1/2 lemon 

- Salt & black pepper 

- 2 tbsp red wine vinegar 

Method:

 

Prepare the lamb: Trim excess fat and make shallow cuts on both sides. Mix all marinade ingredients and rub over lamb. Cover and marinate in the fridge overnight.

 

Roast the lamb: Preheat oven to 190ºC. Line a deep roasting pan with two layers of foil and parchment paper, leaving an overhang. Layer potatoes, onions, carrots, and capsicums, seasoning with salt and pepper. Place marinated lamb on top, add bay leaves, and pour in stock. Seal with parchment and foil. 

 

Cook: Roast for 2.5-3 hours until tender. Unwrap, sprinkle feta on top, and return to the oven for 10 minutes. 

 

Serve: Pull lamb into chunks and serve with veggies and toasted sourdough to soak up the juices.
