Uber Huber Issue 210

Ready for a little trip to Germany without leaving Singapore? German Unity Day falls on 3rd October, and we’re marking the occasion with plenty of flavours to enjoy throughout the month, from the Butchery to the Bistro.

It’s also a fitting time to give a little spotlight to Thomas Kreissl, our General Manager. With his German roots and many years spent here in Singapore, Thomas has long been a key pillar of the Butchery, leading our team at Dempsey with his wealth of experience, knowledge and love for good food. With our German-inspired celebrations happening throughout October, it feels like the perfect time to celebrate Thomas and all that he brings to Huber’s.

So, what can you look forward to this month? Our butchers have prepared a trio of sausages, freshly made in-house and inspired by the flavours of Germany and neighbouring Austria and Hungary. You’ll also find a selection of 14 German cheeses, our new Tesch wines, and our Wine of the Month, Bertram-Baltes Spätburgunder Handwerk.

There are more new finds to discover on our shelves too, including Swiss salami and chocolates, as well as a beautiful range of French honey.

Our Meat of the Month is Huber’s Cage-Free Whole Chicken, naturally juicy and flavourful. We’ve also featured it in this month’s recipe, Wiesn-Hendl Stuffed Roast Chicken, a hearty dish that’s easy to recreate.

Christmas will be here before we know it, but first, let’s enjoy October! Drop by the Butchery to explore what’s new, or settle in for a meal at the Bistro, where we’ll be serving a special German Unity Day menu alongside our German cheese platter. There’s plenty to taste and discover this month.

Wishing you a wonderful October!

Meat Of The Month:
Huber's Cage-free Whole Chicken

We’ve featured plenty of beef, pork and lamb, so how about some poultry this month? Our Meat of the Month turns the spotlight on Huber’s Cage-Free Whole Chicken, carefully sourced from one of our trusted top farms and delivered fresh to us.

Raised cage-free, the chickens are fed a carefully selected grain diet of wheat, barley and corn, contributing to their remarkable juiciness and flavour. They are also growth hormone-free and free from antibiotic residues, and specially selected to ensure consistent quality. Versatile and naturally flavourful, the whole chicken is perfect for roasting, grilling or turning into a comforting family meal.

Looking for a delicious way to prepare it? Try our Recipe of the Month below!

Recipe Of The Month:
Wiesn Hendl (Weisswurst-Stuffed Roast Chicken)

Golden, aromatic and packed with comforting German flavours, our Wiesn Hendl (Weisswurst-Stuffed Roast Chicken) is a roast with an Oktoberfest-inspired twist. The whole chicken is seasoned with thyme, marjoram, oregano and sweet paprika, then brushed with spiced melted butter as it roasts, helping to create that beautiful golden-brown colour and wonderfully savoury aroma.

The real surprise is inside. Huber’s Weisswurst is combined with Laugen pretzel, fresh parsley and egg to create a hearty stuffing that soaks up all those delicious roasting juices. Roasted gently until cooked through, the result is juicy, tender chicken with crisp, beautifully browned skin and a rich, flavourful stuffing.

Serve it straight from the oven with Händlmaier’s Bavarian Sweet Mustard, warm Laugen pretzels and a cold Kuchlbauer Hefeweissbier for the full German experience. Want to make it at home? Click the link below to watch the full recipe and follow along step by step!

This Month's Sausage Picks

This month, we’re bringing together three sausages inspired by Germany, Austria and Hungary, specially created to commemorate the national days of all three countries. Curated by our General Manager, Thomas Kreissl, the recipes draw on his German roots, culinary knowledge and the traditional flavours of Central Europe. Each sausage is freshly made in-house by our butchers using premium meats, with no fillers, no added MSG, no chemicals and no preservatives.

Käsekrainer – 120g
Inspired by the Austrian classic, our largest sausage of the trio combines beef and pork with Austrian cheese similar to Emmentaler and sweet Hungarian Hódi paprika. Rich, juicy and savoury, each bite brings together meaty flavours with pockets of creamy, melted cheese and a gentle sweetness from the paprika.

Currywurst – 100g
Our take on a much-loved German favourite, made with pork and seasoned with curry powder, lemon powder and a blend of spices. Savoury and aromatic with warm curry notes and a subtle citrusy lift, it offers a delicious balance of spice and freshness.

Mangalica Bratwurst – 65g
The smallest of the trio, but certainly not short on flavour. Made with premium Mangalica pork and seasoned with marjoram, Hódi paprika and selected spices, it is naturally rich and succulent, with a full-bodied pork flavour complemented by gentle herbal and paprika notes.

These trio offers three distinctive flavours and sizes to enjoy, taste all three special sausages at Huber’s Butchery this October!

Wine of the Month
Bertram-Baltes Spätburgunder Handwerk

Continuing our celebration of German flavours this month, our Wine of the Month is also one of our newest arrivals. From the Ahr Valley, a region particularly renowned for Spätburgunder (Pinot Noir), this wine reflects the distinctive character of its vineyard soils.

The vines grow in slate and volcanic soils that store heat and add a distinct mineral backbone to notes of wild strawberries, red cherries and raspberries. Fruity yet mineral-driven, with bright red fruit and a refined character. Enjoy with grilled salmon or mushroom risotto.

Now available at Level 1, Huber’s Butchery.

Celebrating 170 Years Of German Community And Heritage In Singapore

Huber’s Butchery was glad to play a part in the German Association Singapore’s milestone celebration on 26th September, supporting the occasion with ingredients and joining them in commemorating 170 years of community and heritage.

It was wonderful to see the celebration come together so successfully. The evening was beautifully organised, with a special highlight being the talented children who took to the stage.

Their singing and musical performances brought such warmth to the occasion and made the celebration even more memorable.

Congratulations once again to the German Association Singapore on this remarkable milestone, and here’s to many more years ahead!

German Unity Day Menu at Huber’s Bistro

German Unity Day is a special occasion for us, and from 2nd to 4th October, we’re marking the celebration at Huber’s Bistro with a menu filled with familiar German favourites. For these three days, you’ll find comforting classics such as Jägerschnitzel mit Pommes, Currywurst Berliner, and ½ Roast Pork Knuckle served with Sauerkraut and Bread Dumpling, alongside more German dishes to discover.

Good German food calls for a good German beer to match. To accompany the menu, we’ll be serving Kuchlbauer Turmweisse at $12 per bottle. Brewed in Abensberg, Bavaria, by the family-owned Brauerei zum Kuchlbauer, this traditional wheat beer is refreshing and full of character, with fruity notes and a gentle spiciness that pairs especially well with hearty German fare. The special menu will only be around for a short while, so drop by Huber’s Bistro and enjoy a little taste of Germany with us.

Continue The Feast With Our German Cheese Platter

Still have room for a little more? Try our cheese platter featuring five distinctive German cheeses, perfect for sharing between 2–3 people and available for the month of October only.

Discover Our New Tesch German Wines

Germany is renowned for Riesling, and our latest arrivals from Weingut Tesch offer a wonderful way to discover just how expressive this celebrated grape can be. With roots dating back more than three centuries, Tesch is a family-run winery in Langenlonsheim, in Germany’s Nahe wine region. Today, the estate brings a fresh, contemporary perspective to its long winemaking heritage, with a clear focus on producing pure, dry and characterful Rieslings for a new generation of wine lovers.

What makes the range particularly interesting is its vineyards. The Nahe is known for remarkably diverse soils, from limestone and loam to sandstone and volcanic influences. Tesch allows these differences to shine through its single-vineyard Rieslings, with each site bringing its own personality to the glass. The grapes are selectively harvested by hand, with sustainable vineyard management forming an important part of the estate’s approach.

Across the range, expect dry, fresh and precise German Rieslings, with vibrant acidity, citrus and stone-fruit notes and, depending on the vineyard, everything from softer, rounded textures to striking mineral and savoury characters. Their refreshing character also makes them wonderfully food-friendly. Enjoy a bottle alongside seafood, fish, poultry, pork, salads or lighter dishes, and explore how the different vineyards bring something new to each pairing.

Discover the Tesch collection and a different side of German Riesling, now available at Level 1 of Huber’s Butchery.

We’re delighted to welcome La Manufacture du Miel to Huber’s, with a selection of exceptional French honeys that celebrate purity, traceability and the unique character of each floral terroir. Founded by beekeeper Thierry Dufresne, the Provence-based producer carefully traces its honey from the flowers visited by the bees right through to its own honey house.

From the delicate, pale golden Acacia and fragrant Lavender to the deeper, more robust flavours of Chestnut and Garrigue, each honey has its own distinctive colour, aroma and character. Sainte-Baume, White Heather and Spring Flower offer even more varied floral profiles, ranging from delicate and mellow to rich and aromatic. Naturally raw and wonderfully smooth, these honeys can be enjoyed simply drizzled over toast or yoghurt, stirred into tea or coffee as an alternative to sugar, or added to your favourite recipes.
