White asparagus takes centre stage
this May in a special, limited-run cooking class. Specially sourced from
Spargelhof Holste, these prized spears are grown beneath the soil, giving them
their signature ivory colour and a flavour that is delicate, refined and
quietly complex. Expect a tender, almost silky texture with gentle sweetness
and a subtle nutty finish.
Across three exclusive sessions this May, Chef
Clement will lead a live cooking demonstration, sharing techniques and insights
behind every course. You will get to taste the full menu and learn how to

Recipes:
- Starter: Beer-battered white asparagus with Parmesan
cheese, horseradish sauce and a selection of Austrian Vulcano ham
- Main: Grilled herb-crusted pork tenderloin in pork caul
with white asparagus moussaka and chunky cinnamon apple sauce
- Dessert: German-style white asparagus strudel with
strawberry ice cream
