Pork Schnitzel

Ingredients

200g pork topside, sliced
50g Mozzarella cheese, sliced
50g Parmesan cheese, grated
100g Japanese bread crumbs 
100g all-purposed flour
2 eggs
50g sage
1 lemon wedge
Olive oil
Sea salt and black pepper

Cooking Method

1. Arrange layers of pork topside together.
2. Season pork topside with salt, pepper, mozzarella, parmesan. Layer sage in between the pork
slices.
3. Coat pork topside with flour, egg and breadcrumbs mixture.
4. Shallow fry pork topside in olive oil for 3 to 5 minutes on each side till cooked.
5. Serve with coleslaw and lemon wedges.
