Aubergine and Goat Cheese

Ingredients

1     Aubergine, sliced 
1     Goat cheese, sliced
30g Pine nuts

Cooking Method

1. Season aubergine with salt, pepper and olive oil.

2. In a pan on high heat, saute mushrooms in olive oil until brown. Add bacon and shallots.     

3. Stack aubergine, goat cheese and pine nuts on a tray and bake at over 180 degree Celsius for 10 mins or until the cheese is melted.

4. Remove from oven and serve.
