1. Add the ingredients for a dry rub into a bowl and mix.
2. Cut the pork into 2-inch strips.
3. Make a few cuts on the meaty side.
4. Sprinkle dry rub on the meaty side and massage.
5. Wipe off any powder on the skin and pat it dry.
6. Cross hatch skin with a sharp knife but not cutting into the meat.
7. Wrap pork belly with foil, keeping the sides of the foil no higher than the pork belly and exposing the skin.
8. Brush the skin lightly with vinegar & sprinkle some salt.
9. Place inside 110 °C oven for 75 to 90 minutes.
10. Remove and brush the skin with oil.
11. Return to the lowest rack of the oven and broil at 250°C for 12 - 15 minutes.
12. Rest for 10 minutes.
13. Cut skin side down and enjoy your crispy pork belly!
