1. Slice the zucchini in half lengthwise. Scoop seeds out taking care not to over-scoop otherwise your boat will be flimsy.
2. Drizzle olive oil and par-cook zucchini in oven preheated to 180°C for 10 minutes. Remove and set aside.
3. Prepare the turkey burrito filling. Cook and simmer all ingredients except for the cheeses and coriander. Stir in the grated cheddar at the end.
4. Fill zucchini boats with filling and top with grated cheddar and mozzarella cheese. Bake in oven preheated to 200°C for 20 minutes.
5. Garnish with coriander and serve hot.
You may replace the turkey mince with your choice of meat or sausage stuffing for a different kind of boat!
This recipe is great for stuffed capsicums too! (You don't have to precook capsicums before filling them)
