Easy Oven Tandoori Chicken

Ingredients

For 4 servings:

500 g Fresh boneless chicken leg or breast, cut into 2-inch pieces
6 tbsp Unsweetened greek yogurt 1 tsp Ground cumin 1 tsp Ground coriander 1 tbsp Chilli powder 2 tbsp Garam masala powder 1 tsp Dried fenugreek leaves (kasoori methi) 2 tsp Garlic, grated 1 tbsp Ginger, grated 2 tbsp Lime juice ½-1 tsp Salt, to taste ¼ cup Butter, for basting

Cooking Method

Step 1 Whisk all marinade ingredients to form a paste in a large mixing bowl.
Step 2 Add chicken and rub the marinade in. Cover and refrigerate overnight or at least 4 hours.
Step 3 Preheat oven to 220ºC.
Step 4 Arrange chicken on a wire rack set over a baking tray. Grill for 10 minutes.
Step 5 Remove chicken from oven. Baste with melted butter and return to roast for another 10 minutes.
Step 6 Serve with wedges of lime.
