Step 1 Whisk all marinade ingredients to form a paste in a large mixing bowl.
Step 2 Add chicken and rub the marinade in. Cover and refrigerate overnight or at least 4 hours.
Step 3 Preheat oven to 220ºC.
Step 4 Arrange chicken on a wire rack set over a baking tray. Grill for 10 minutes.
Step 5 Remove chicken from oven. Baste with melted butter and return to roast for another 10 minutes.
Step 6 Serve with wedges of lime.
