1. Cook Japanese rice in rice cooker (1 part Japanese Rice : 1.25 part Water)
2. Add sushi rice vinegar to steaming hot Japanese rice. Use the rice paddle, mix well and cover with damp towel. Set aside.
3. Cut meatloaf into squares.
4. Whisk soy sauce, mirin and brown sugar until sugar dissolves.
5. Pan sear the meatload slices in a little oil over high heat for a minute (until brown). Flip over to fry the other side.
6. Apply soy sauce mixture. Flip the meatloaf and apply more glaze. Repeat a couple of times until meatloaf is sticky and shiny.
7. Assemble by cutting nori sheets into 2-inch strips, set aside.
8. Shape a golf ball size of sushi rice with your hands into a square onigiri.
9. Squeeze a little mayo, top with glazed meatloaf and thinly sliced cucumber or lettuce.
10. Wrap with nori strip and there you have it, Soy Glazed Huber's Meatloaf Musubi. Enjoy!
