Mix all marinade ingredients until all
sugar is dissolved.

Add veal to marinade and flip to make
sure every surface is covered. Transfer to an airtight container or ziplock
bag.

Marinate for 4-8 hours.

Mix the potato starch, flour, baking
powder and baking soda in a bowl. Add water and eggs to the middle. Stir to mix
until you get a smooth batter. Pass through a sieve if it got lumpy.

Preheat oil for deep frying until it
reaches 180°C.

Coat the marinated veal with batter.
Carefully slide it into the hot oil to fry until golden brown, around 5-6
minutes.
7.
Set on a wire rack to drain off excess
oil.

Chop into slices and enjoy with Nyonya
achar and your favourite chilli dip.
