1. Melt the butter in a pot/pan.
2. Add flour and whisk.
3. Slowly whisk in the milk until there are no lumps in the mixture.
4. Add shropshire blue and parmigiano reggiano,
5. Add the salt, pepper, and nutmeg, then whisk until the sauce thickens.
6. Assemble the croque monsieur.
7. Spread a layer of sauce on a slice of bread.
8. Top with mozzarella, gruyere cheese, and kurobuta ham.
9. Add more cheese, then top the sandwich with the other slice.
10. Cover the top with more sauce and another layer of cheese.
11. Into the oven at 190°C until the cheese is melty and bubbly.
12. Serve and enjoy.
