1. Slice aubergine and cross-hatch score.
2. Grill until soft and charred.
3. Transfer to a baking tray.
4. Whisk the ingredients for the miso mixture together and set aside.
5. Spread miso mixture on the aubergines and sprinkle some sesame seeds, before grilling for 5 minutes.
6. Stir fry pork, garlic, ginger, carrot and chilli until fragrant.
7. Add miso and a splash of boiling water.
8. Simmer and add spring onion.
9. Plate up & serve, topping the aubergines with the minced pork.
