Moo Shu Pancakes

Ingredients

180 g  Plain flour
120 ml Hot boiling water

Cooking Method

1. Mix the flour and water in a bowl
2. Press mixture into a ball while it is still warm. 
3. Knead for approx. 8 minutes.
4. Cover with cling film and rest for 30 minutes.
5. Oil and roll dough into a log.
6. Cut into 12 - 15 g pieces. 
7. Round one into a ball and flatten with the base of your palm.
8. Spread oil on top
9. Roll another ball, flatten and stack on top.
10. Roll both pieces together until approx. 2mm thin.
11. In a non stick pan (without oil), grill both sides 
12. Separate the two layers while the moo shoo is still hot. 
13. Cover with a damp towel and set aside until ready to use.
