Back Bacon, Rosti & Eggs

Ingredients

Serves 2 - 3 pax

500 g  Rosti
Eggs
Onions, diced
Huber's nitrite-free back bacon
Spring onions
Pepper


Cooking Method

1. Brown onions and bacon. 
2. Transfer into a bowl and set aside.
3. Mix the bacon and rosti in a non-stick pan.
4. Press down with a spatula to flatten it.
5. Let it fry over medium-high heat to crisp up for approx. 7 - 9 minutes.
6. Place a plate over, hold it firmly and flip the rosti onto it.
7. Slide rosti back in the pan to crisp up the other side.
8. Top with two sunny side up eggs.
9. Garnish with pepper and spring onions.
10. Serve as a sharing plate or cut into individual portions.
