1. Mix dry rub ingredients.
2. Roll and coat pork tenderloin in the dry rub.
3. Sear all sides of the pork tenderloin.
4. Transfer to 200°C oven and roast for 15 minutes.
5. In the bowl of watermelon, add the red onion, green chilli, and coriander.
6. Add the salt and lime juice, then mix well and set aside.
7. Cover roasted pork in foil, let it rest for 15 minutes.
8. Slice the pork and plate up with the watermelon salsa.
9. Drizzle the roasting juice over the pork, and enjoy!
When rubbing the pork, you can choose to marinate it for a while for more flavour! Remember to let the pork rest before slicing it.
