1. Cut the sausages into 1-inch pieces. If you are using canned beans, strain and rinse them lightly.
2. In a pan or pot, sauté garlic and onion for 1 minute.
3. Add tomatoes, carrots and capsicum. Sauté for about 1 minute.
4. Add stock, passata, sumac and dried herb. Stir and simmer for 3 minutes.
5. Add the sausage and simmer for 5 minutes.
6. Add pasta and simmer according to the timing indicated on its packaging. You do not want to over simmer them.
7. Stir in the beans and spinach, and simmer for another minute.
8. Add salt and pepper to taste.
9. Sprinkle with more sumac before serving. Enjoy!
