1. Beat eggs and water very well, set aside.
2. Mash tofu with a fork.
3. Strain egg mixture over tofu, this step removes excess air bubbles resulting in a smooth steamed egg custard.
4. Cover dish with cling film and steam for 15-25 minutes until custard is set.
In the mean time, prepare the sauce.
5. Sauté garlic until light brown.
6. Add minced meat and sauté, breaking them up into small pieces.
7. Add the white part of spring onions, minced chilli and all sauce ingredients except sesame seed oil and cornstarch slurry.
8. Let minced meat simmer and braise for 10 minutes.
9. Thicken sauce with cornstarch slurry.
10. To serve, ladle minced meat sauce over steamed egg custard, drizzle sesame seed oil and garnish with spring onion.
