Kurobata Pork Oyako Don

Ingredients

Serves 2 pax 150 g Thinly sliced pork, beef or chicken pieces
½ Onion, sliced ½ cup Dashi stock 1 tbsp Light soy sauce 1 tbsp Mirin 1 tsp Sugar 2-3 Eggs, beaten Spring onions, chopped for garnish Toasted sesame seed, for garnish

Cooking Method

1. Mix dashi, soy sauce, mirin, and sugar together and set aside. 2. In a shallow pan, sauté onions until softened and translucent. 3. Arrange pork slices in a single layer and pour sauce mixture over it. Simmer with the lid on for ~5-7 minutes. 4. Pour eggs all over and simmer for another 3-4 minutes. 5. Garnish with chopped spring onions. 6. Serve with fluffy Japanese rice and some kimchi / pickled cucumber.
