Prepare the Chimichurri Rojo in advance
1. Char bell pepper, remove the skin and seeds.
2. Blend all the ingredients.
3. Refrigerate overnight and allow the flavours to meld.
Making the Steak Accordion
4. Using a knife, cut the steak.
5. Cook the steak to your preferred doneness.
6. Plate and top with prepared chimichurri rojo.
7. Enjoy.
