1. Remove husk from corn discarding the silk and put aside.
2. Boil corn in boiling salted water for 6 minutes.
3. Slice goat cheese into 1 cm slices.
4. Remove corn from the cob using a knife.
5. In a mixing bowl, stir together leek, corn, bell pepper, lime juice, sea salt, black pepper, basil, and honey.
6. Place 5 pieces of goat cheese in the middle of corn husk.
7. Spoon 3 tbsp of leek mixture over goat cheese.
8. With butcher string, roll up and secure the package of corn and goat cheese.
9. Bake in a pre-heated oven at 180ºC for 12 minutes.
10. Cut cheese package into 2 and serve.
