An uncooked sausage is one made from uncooked meat, which is chopped, minced or blended, seasoned and formed into patties or stuffed into a casing. It may be a mixture of meat and it can either be a fine textured sausage or a coarse textured sausage. Fresh sausages have not been cooked or cured, but may be smoked and must be cooked before eating. Includes products such as English pork sausage (pictured below), farmer grill sausage and borewors.
