Listen up, quinoa lovers!
Have you heard of freekeh, the other superstar in the superworld of supergrains?
A staple in the Middle Eastern diets for centuries, freekeh is an ancient grain made from wheat harvested while green and young, and later carefully roasted, rubbed and dried.
It has recently seen a breakthrough in its global popularity for being loaded with nutritional benefits. If you are looking for an alternative to other whole grains like quinoa or brown rice, freekeh could be a wonderful option.
Otherwise, you could also add cooked freekeh to your salads or to your soups. (PS: If you're gluten-free, give freekeh a pass as it is a wheat product)
To cook freekeh, look at adopting a 2.5:1 ratio – for every cup of freekeh to be cooked, add 2.5 cups of water or vegetable stock. Bring it to a boil, reduce heat, and simmer for approximately 15 minutes until all liquid is absorbed. Like pasta, some people prefer to cook it in salted water with a little oil but this is a personal preference.
