Smoked Duck Breast Salad

Ingredients

For 4 servings:

1pc smoked duck breast
6tbsp extra virgin olive oil
1 ½ tbsp red wine vinegar
1tbsp blueberry vinegar
1 clove of garlic, chopped
1 French shallot, diced
1pkt assorted garden greens of lettuce of your choice, washed & dried thoroughly
A few fresh leaves from chervil, Italian parsley & tarragon
Sea salt and freshly cracked pepper

Cooking Method

  1. Prepare the vinaigrette by mixing the oil, vinegars, garlic, onion, salt, freshly grounded black pepper and sugar with a whisk in a bowl large enough to hold all the greens. Season to taste accordingly.
     
  2. Slice the duck breast into thin slices and put aside. Then toss the garden greens with the vinaigrette in the salad bowl.

Serve

  1. Put the salad on a plate and arrange the slices of duck around it.

Tips

  1. Halved walnuts, grapes or caramelized Belgium endive or slices of sautéed potatoes may be added too. With the additional ingredients, it may then be served as a light main course for lunch.
